This Pignoli Italian Cookie Recipe is Fantastic!

Pignoli Cookies

A quick recipe for one of my favorite Italian cookies … Pignoli!

2 ½ cups flour
½ teaspoon salt
1 cup unsalted butter
… ½ cup sugar
3 large egg yolks
1 ¼ teaspoon vanilla extract
1 teaspoon grated lemon zest
1 cup pine nuts
1 large egg white, lightly beaten

Heat oven 350F. Line baking sheets with parchment paper. In medium bowl, whisk flour with salt.
Using electric mixer, beat butter and sugar in large bowl until light and fluffy. Add the egg yolks,
Vanilla and lemon zest, and beat to combine. With mixer in low, gradually add the flour mixture.
Place pine nuts in small bowl and the egg white in a second small bowl. Roll the dough into 1-in. balls
(about 1 Tbsp each). Dip the top and sides of each ball first in the egg white, then into the nuts,
pressing gently to help them adhere.
Place cookies nut-side up on baking sheets about 2 “ apart. Bake until nuts are golden and cookies
lightly golden around edges, 16-18 minutes. Let cool on sheets 5 minutes before transferring to a
wire rack to cool completely.
